Pockets of Fall's Flavor

Whenever we aren't in the mood for 
a fork and knife, first thought usually goes to pizza.
And yes we do make a lot those around here-
not only due to the utensil thing though-
making pizza is fun and gratifying, a platter full
 of homemade pizzas is like eye candy to me.
We've tried lots of doughs -Delphina's
allrecipes both excellent, we experiment with 
all types of cheeses, greens, and of course 
the Italian meats.   
I came accross this calzone recipe from 
Sprouted Kitchen- a real favorite of mine.

These little pockets look perfect for night of catching up, 
playing a game or watching a little tv.

APPLE + SMOKED MOZARELLA MINI CALZONES // Makes 12
1 Whole Wheat Pizza Crust (see recipe here)
1 Yellow Onion, sliced thin
1/2 tbsp. Butter
1 Medium Apple (Honeycrisp, Fuji or anything crispy)
1 Cup Diced Smoked Mozarella Cheese
1 Cup Shredded Parmesan Cheese
Handful of Fresh Thyme
Handful of Fresh Chives
Extra Virgin Olive Oil for brushing
Dijon Mustard to Serve
